100_1597One of my favorite soups in the world is Chicken Tortilla and not the stuff from a can.  The homemade variety that I use to get all the time when I was home back in Texas.  I would go to a local Mexican Restaurant and order it and it always came with a side of Mexican rice, pico de gallo, sliced avocado, cilantro, and fresh tortillas.

WOW!!!

After all of the cupcakes I have been making, I needed to slide in a few savory dishes. For the first one I decided to make the Fresh Mango Summer Rolls in Vegan with a Vengeance. Problem is sometimes I like mangos and other times, not so much. But I do love me some avocado, yummy. So I decided for the recipe that I would sub avocado for the mango and it turned out fantastic. Since this recipe makes 20 rolls and I wasn’t about to sit down and eat 20, I decided to make some non-vegan rolls to satisfy my omni friends too. For half of the rolls I added 1.5 sliced of shrimp. They were nice, but the vegan ones were very tasty. (more…)

 

HOLY Spicy Lime Chicken with Black Bean and Avocado Salad Batman July 21, 2008

HOLY CRAP!!!!

I just made the easiest and tastiest black bean salad ever. It has a nice heat from the chipotle peppers. Then you get a sweetness from the honey, and a nice citrus bite from the lime juice. It was the perfect balance of flavors. I really could not believe the flavors that were coming from something that was so simple to make, and that was just the side dish. The main dish was actually grilled chicken breast that was marinated in the same base that is used in the salad. Because of state regulations I can’t have a grill in, at, or around my apartment so I do what I usually do when something is called to be grilled; use a grill pan or just cook it in a sauté pan.
