Cinco de Mayo – 2 days late May 7, 2009

I was actually unable to celebrate Cinco de Mayo this year because I was working that night 😦

For the past couple of years I have celebrated Cinco de Mayo by making Chicken Tortilla Soup, Refried Beans, Mexican Rice, and Homemade Tortillas.  This year I celebrated it on the 6th and made a completely different assortment of food.  Well, except for the tortillas.  I can’t stand store bought, so I always cave and make my own. Vegan Adventure #6 August 29, 2008

So far this whole Vegan Adventure is going pretty smoothly. I have liked everything and haven’t had any mishaps. There is a lot of stuff that is coming in the next week that I LOVED.

Today’s Vegan Adventure is Black Bean, Mushroom, and Quinoa Stuffed Peppers. My first thought when I saw this recipe was, “What the hell is quinoa?” I really have never heard of it before and had no idea what it was. Come to find out it is a complete protein. Alright, way to go quinoa. I had no idea what it looked like either so when I was in the grocery store looking for it I thought I would never find it in the organic section. Then finally the clouds parted, the clerk moved out of the way, and there it was 🙂 . (more…)

 

HOLY Spicy Lime Chicken with Black Bean and Avocado Salad Batman July 21, 2008

HOLY CRAP!!!!

I just made the easiest and tastiest black bean salad ever. It has a nice heat from the chipotle peppers. Then you get a sweetness from the honey, and a nice citrus bite from the lime juice. It was the perfect balance of flavors. I really could not believe the flavors that were coming from something that was so simple to make, and that was just the side dish. The main dish was actually grilled chicken breast that was marinated in the same base that is used in the salad. Because of state regulations I can’t have a grill in, at, or around my apartment so I do what I usually do when something is called to be grilled; use a grill pan or just cook it in a sauté pan.
