Daring Bakers’ Challenge: Tiramisu February 28, 2010

The February 2010 Daring Bakers’ challenge was hosted by Aparna of My Diverse Kitchen and Deeba of Passionate About Baking. They chose Tiramisu as the challenge for the month. Their challenge recipe is based on recipes from The Washington Post, Cordon Bleu at Home and Baking Obsession.

If you read my blog regularly then you know I love tiramisu, and so does most of my friends and family.  I have a regular go to recipe that I always use that is very simple, but this time it was nice to try something different and be challenged 🙂  I also made this as my birthday cake this year, so it was a very good day. Tuesdays With Dorie: Honey-Wheat Cookies February 23, 2010

This weeks Tuesdays with Dorie was chosen by Michelle of Flourchild.  She chose Dorie’s Honey-Wheat Cookies which is located on page 81 in Baking: From My Home to Yours.  This is another one of those recipes that I could eat the dough until it was all gone 🙂

For this recipe I used some toasted wheat germ that I already had on hand, and I used the Sourwood Honey that my mom/dad bought for me when they were visiting this summer.  I swear every time my parents visit I always get a HUGE jar of honey 🙂  So far, I have tasted Sourwood and Wildflower Honey.

Wait, that one time I actually bought myself a HUGE jar of clover honey 🙂

When I was reading blogs today, I saw that some members really didn’t care for this cookie.  Which surprised me because I loved it.  To me it just tasted like a lemon cookie.  My first thought was this would be good dipped in powdered sugar.  The cookies were perfect raw, hot out of the oven, and once they were cooled.  I am pretty sure I will be making more of this recipe, when I want a cookie that is kinda healthy 🙂

Daring Cooks’ Challenge: Mezze February 14, 2010

The 2010 February Daring COOKs challenge was hosted by Michele of Veggie Num Nums. Michele chose to challenge everyone to make mezze based on various recipes from Claudia Roden, Jeffrey Alford and Naomi Dugid.

I was a little excited for this challenge this week.

Do I say that every week? But it is true 🙂

I have always wanted to make Pitas from scratch, but I just have never gotten around to it.  I also wanted to try my hand a falafels, especially since I have never had one.  Which is kinda shocking since back in college Mandi and I would frequent Souvlaki 1-2 times a week.  We would sit at the bar and look out the window and people watch.  Also, we would talk to Mike, the current owner, he is a great guy and one that can always make you laugh with his sarcasm and straight truth.  It has been 6 years since Mandi and I have been back to Souvlaki together, but when I go back to visit I always stop in a get a Gyro and a Pita with Cheese, and without fail Mike always asks about my roommate, Mandi. Tuesdays With Dorie: Rick Katz’s Brownies for Julia February 9, 2010

Beautiful plate of brownies


I just ate the best brownie in the entire world, and I mean the BEST!!!!!

Holy Crap…Tanya of Chocolatechic, I worship the ground you walk on for picking this and Dorie Greenspan you are a GOD!!

Like I said a sentence ago or so, these have to be the best brownies EVER.  I know a lot of the Tuesdays with Dorie members had some problems with the gooeyness, but DAMN these are suppose to be.  I found that mine had a fudgey consistency to them and it was FABULOUS.

First off, I would like to say that I baked these bad boys in an 8 x 8 x 3 square pan and baked them for approximately 40 minutes.  I let them cool in the pan and then lifted them out with the parchment paper that I lined the pan with, and let over hang.  Then, I placed the brownies uncut on a plate and placed it in the freezer for 2 hours, so that they were easier to cut 🙂  After 2 hours  I took them out of the freezer and proceeded to cut them into 16 pieces.  The key to cutting these is to rinse your knife in hot water and wipe clean after each cut.  I pretty much treated the brownies like a cheesecake because both like to stick to a knife like white on rice.

After stacking these and taking pictures, I took the top most brownie and bit in.  I could have sworn that I had died and gone to Brownie Heaven in that one moment.  They were perfect.  The chocolate flavor was delicious (I used Scharffen Berger Unsweetened 99% Cacao Baking Chocolate Bar, and Ghirardelli Chocolate 60% Cacao Bittersweet Chocolate) and spot on.  The texture of the brownie reminded me of a smooth fudge.  I can’t tell you how hard it was for me to only eat one and then walk away.  I can still see the plate of brownies sitting in the kitchen calling to me.

The most perfect brownie in the entire world, and now you need to make it and eat it.  RIGHT NOW.  On your mark…..Get set……GO MAKE SOME BROWNIES 🙂
