Tuesdays With Dorie: Whole Wheat Bread and Cranberry Walnut Pumpkin Loaf November 27, 2012

This is my TuesdaysWith Dorie catch-up. I actually made both of these at the appropriate time but since I was participating in VeganMoFo, I was not able to post anything that was not vegan.

For the week of September 18th, I guess I just forgot to post, Whole Wheat Bread was the recipe and it was hosted by Michele of Veggie Num Nums and Teresa of The Family That Bakes Together. This bread was actually very easy to make and pretty straight forward. I mostly just had this bread in the morning toasted with butter and jam.


For the week of October 2 the recipe was Cranberry-Walnut Pumpkin Loaf which was hosted by Rebecca at This Bountiful Backyard. This recipe can be found on page 108 of Baking With Julia. For this recipe I actually made some modifications. First, I used fresh pumpkin because I had never roasted my own and then put it in a recipe. Usually I just buy the canned stuff and that is that. I also substituted dried cranberries for the fresh because at the time I was unable to find fresh cranberries.

The bread actually turned out great. This is another one that I ate for breakfast toasted with some butter. It was perfect with a cup of black tea. Since the recipe made 3 small loaves, I actually only ate1 loaf and froze the other 2.

The Tuesdays With Dorie recipe for July 12th was picked by Lynne of Cafe LynnyLu.  She picked Dorie’s Cream Scones which are located on page 27 in Baking: From My Home to Yours.  I actually made these the week after the challenge and then never posted, opps.  That is currently the story of my life because of Emma (my zombie baby…one of the many nicknames she has acquired).  She is currently sleep contently in my arms while I type this 🙂

For the Cream Scones, I decided to mix it up a bit and add a little flavor to them.  I stuck with the base of the recipe, but then I made the following additions/deletions:

1) Instead of currants I used chopped pecans

2) Added 3 tbsp of pumpkin puree and 1/4 tsp of pecan extract to the wet ingredients – I had some pumpkin leftover in the fridge 🙂

3) To add that traditional pumpkin pie flavor, I used 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, 1/4 tsp ground ginger to the dry ingredients.

I knew this dough was going to be sticky so instead of added extra flour, I decided to use Dorie’s trick for shortbread.  I put the scone dough in a 1-gallon plastic bag, then I rolled it  inside the bag so that it was a even thickness.  I placed the bag in the freezer for about 15 minutes so that it would firm up and be easier to cut into 12 pieces.  Once the dough was firm, I sliced the bag open on the seams, cut it in half and cut each half into thirds (fat rectangles).  Then I cut eat rectangle on the diagonal, to form triangles.

After the scones were done in the oven, I drizzled them with two icing: vanilla and cinnamon.  The vanilla icing was just 1/2 cup confectioners’ sugar, splash of vanilla extract, and 1-3 tbsp cream.  You mix them together until you get the desired consistency.  For the cinnamon icing, I just added about 1/2 tsp ground cinnamon to the left over vanilla icing.

The scones turned out fantastic.  I was going for the flavor of Starbucks’s Pumpkin Scones and I think I might have hit it on the nose with this one.  I think next time, to make the scones thicker that I won’t roll them out as thin 🙂


Daring Bakers’ Challenge: Doughnuts!!!!! October 29, 2010

The October 2010 Daring Bakers challenge was hosted by Lori of Butter Me Up. Lori chose to challenge DBers to make doughnuts. She used several sources for her recipes including Alton Brown, Nancy Silverton, Kate Neumann and Epicurious.

Lori provided us with four different recipes to choose from for this challenge: Yeast Doughnuts, Old-Fashion Buttermilk Cake Doughnuts, Bomboloni, and Pumpkin Doughnuts.  In a perfect world I probably would have made the yeast or the old-fashion cake, but because I procrastinated, YET AGAIN!!! I stuck to something I have done before and went with the pumpkin doughnuts.  Recipe wise, it was very similar to something I have made before (see regular version here, and vegan version), flavor wise I would stick with what I made before. This weeks Tuesdays With Dorie was chosen by Janell of Mortensen Family Memoirs. She picked Dorie’s Caramel Pumpkin Pie which is located on pages 322-323 in Baking: From My Home to Yours.

Okay, I am really running under the wire tonight so I am going to keep this short and sweet and amend it once I have a bit of this yummy pie.

I just pulled this baby out of the oven and the house smell fantastic.  It has hints of a butter crust and spiciness in the air.  I am sure I am going to love falling asleep with these smells in the house.

Tomorrow is my first day off in 6 days and unfortunately I am going to be driving 2 hours to go pay my respects to a college friend who recently passed away.  So, I am not sure when this post will get amended but it will happen in the next 2 days for sure.


After a day of driving in the rain for 4 hours, seeing old friends, saying goodbye to one, and then spending the rest of the night outside in the cold/rain at a seafood festival while God cried in my Beer and Coffee; I am glad to wake up to the sun shining and a piece of Caramel Pumpkin Pie in front of me.

I actually had the crust turn out perfect this time, it didn’t even shrink on me…YAY!!!  The crust is buttery and flaky, and the filling to the pie is smooth and has a hint of rum lingering on the middle of my tongue.  It is the breakfast of champions 🙂  Now I am just wishing for a angel or fairy to bring me a cup of coffee and I will be set.


Tuesdays With Dorie: Pumpkin Biscuits…Vegan Style October 20, 2009

100_2427This weeks Tuesdays with Dorie was chosen by Erin of Prudence Pennywise.  She chose Dorie’s Sweet Potato Biscuits which are located on page 26 in Baking: From My Home to Yours.  All last week, I kept thinking if making these pumpkin would be okay.  Then I strolled on over to the comments section and somebody asked the question I was thinking, and Laurie actually came back with what to do via Dorie.

Yeah, that sounded completely confusing 🙂

I ended up making these late last night.  Yay, for procrastination baking.

If you want to make the recipe pumpkin you have to add the following to the recipe: 2 tbsp flour, 2 tbsp granulated sugar, and 3/4 – 1 cup pumpkin puree.   I also decided to up the spices and I added a pinch of the following: ground ginger, nutmeg, cinnamon, and cloves.  The spices added a hint of that pumpkin spice flavor in the background.  Finally, to make these vegan I just substituted 6 tbsp of  Earth Balance Vegan  Buttery Sticks for the 6 tbsp of unsalted butter.

These turned out GREAT.  I heated a few up in the microwave :SHOCK: and added some spread to them this morning for breakfast.  I have to say that mine were not as flakey as others, but I would be to blame on that front.  I man handled the dough 🙂  But as biscuits go, I would more than likely make these again if I had some extra pumpkin on hand.

This weeks Tuesdays with Dorie was chosen by Kelly of Sounding My Barbaric Gulp.  She chose Dorie’s Pumpkin Muffins which is located on page 13 of Baking: From My Home to Yours.  I actually ended up making this recipe 2 weeks ago with the left over pumpkin that I had from making the Pumpkin-Spice Doughnuts.  I didn’t want the pumpkin to go bad and I woke up on Monday morning 2 weeks ago just craving pumpkin muffins.  So I went to work that morning and made a batch. Okay I finally did it.  I made the Pumpkin Spice Doughnuts from my previous post vegan.

They tasted fantastic.  There is no way that anyone would be able to tell the difference between the vegan and the non vegan versions. (more…)
