It is that time of year again….

It is VEGAN MOFO time aka Vegan Month of Food.  Again I am participating, and if you have read my blog before you know that I am an omni that likes to experiment with vegan food and I find it tasty.  It is just hard to give up the habit that is my omni lifestyle to switch over being a full tim

e vegan.  So you could say that I am a part time one 🙂

Oh yeah, and I have become a full time slacker with regard to blogging lately 🙂

This entry I should have written last month, but with Vegan Mofo being in November this year, I conveniently put it off.  In Mid-October I had a bunch of friends over from work for a Pumpkin Carving Party.  One of my friends, Ashley, happens to be Vegan and her husband is vegetarian.

So I came up with a whole menu of food that every one would like that was mostly Vegan friendly.

There was actually only 4 things that weren’t 🙂

Below is the menu of everything I made.  Each item is either marked V (Vegan) or NV (Not vegan).  The items that I have posted about before I have placed links to.  The following recipes can

be found in Veganomicon: Panko- Stuffed Mushrooms, Cornbread, and Lemon Bars.  The Tiramisu Cupcakes can be found in all likely places, Vegan Cupcakes Take Over the World, and then Guacamole can be found in Viva! Vegan.

The Butternut Squash and Apple  Soup was a recipe from my friend Debi.  The actual recipe w

as very simple and completely vegan except for the addition of Half and Half so I just substituted Soy Milk and it turned out fantastic.  Everyone ate everything, and the other omni’s raved about the

food and the cupcakes.  Most omni’s are a little wary about eating Vegan food and everyone dove in without any reservations.  All the new recipes that I made for the night (stuffed mushrooms

and lemon bars) completely surprised me, especially the lemon bars.  If I didn’t know that they were vegan I wouldn’t have been able to guess.  They were that GOOD!!!

I wish I would have taken picture of the soup.  It was pretty and yummy.  I actually have some stashed in the freezer, so next time I pull some out I will take

a picture and post this fantastic recipe.  Maybe I will make that for a post later this month 🙂

The Menu

Appetizers

Panko-Stuffed Mushrooms – V

Avocado Summer Rolls with Thai Dipping Sauce– V

Gourgeres – NV

Chips with Salsa and homemade Guacamole – V

Chicken Salad Puffs- NV

Cornbread – V

Main Course

Butternut Squash and Apple Soup – V

Brunswick Stew – NV

Dessert

Lemon Bars – V

Banana Cupcakes with Peanut Butter Buttercream – V

Tiramisu Cupcakes – V

Pumpkin Cupcakes with Cream Cheese Icing – NV

Well I completely missed the last day of VeganMofo which was disappointing to me.  I had a really great time experimenting with new dishes and I really enjoyed reading everyone else’s adventures.  I am still going to continue with my Vegan Adventure and experiment a lot more.  For my last entry I wanted to talk about something interesting that I came across a few weeks ago at the grocery store.

100_1584I went to the local grocery store to get some soup since I wasn’t feeling so well.  While I was walking passed the Milk area I saw something out of the corner of my eye.  I turned around and saw the most remarkable thing in the world, Pumpkin Spice Silk Soy Milk.  I had no idea that they made seasonal soy milks, and was very excited.  I decided to pick up a container of the Pumpkin Spice Soy Milk and give it a try.  I was very surprised by the flavor and actually loved it.  I have a love, hate relationship with soy milk and this was great.  I think the next flavor that comes out is egg nog so I am definately going to be buying some of that 🙂

Okay I finally did it.  I made the Pumpkin Spice Doughnuts from my previous post vegan.

They tasted fantastic.  There is no way that anyone would be able to tell the difference between the vegan and the non vegan versions. (more…)

Vegan Adventure #22 and VeganMofo #7 October 15, 2008

There was a miracle somewhere and I made a full vegan dinner.  Who would have thought it was possible?  Funny thing is it was very easy.  Another weird thing has occurred.  For about 4 days or so I actually could have been considered a Vegetarian.  I ate absolutely no meat, and it was completely by accident.  Since I have been cooking a lot of vegan food, that is what I have been eating, but it didn’t stay strictly vegan since I had some sweets that happened to have dairy and eggs in them, opps. I am finally posting my VeganMofo entry about the Baked Potato and Greens Soup with Potato-Wedge Crouton along with Tempeh Bacon.  I would like to blame work and my laziness for this post taking so long.   What drew me do this recipe was that it was actually starting to get cold outside for a bit and I thought that a nice potato soup would be good to go with the weather change.  It did actually get a little warmer over the next few days, but it was still a good idea.  Also, I was looking for something cheap to make 🙂 (more…)

I am currently in the process of making the Baked Potato and Greens Soup with a Potato-Wedge Crouton.  I actually have to go to work soon and I work all night, so I won’t be writing my post until late tonite along with taking pictures.  So stay tuned and you will see the results early Saturday morning.  Hope everyone has a great weekend.

Change of plans, I just got home from work and feel horrible and I have to get up in the morning and work another shift.  So I wouldn’t plan on this post being posted until Sunday or Monday at the latest :/

I have been searching for things vegan to make and I am currently trying to stay away from sweets because as you can tell I have been making A LOT of cupcakes.  I have been searching my vegan cookbooks and some not so vegan and I have come up with a line up of dishes that I will be making soon.  Some which might sound a little odd to you.  First I would like to mention that I am currently an omni and so are my two adorable monkeys.

Ever since I was at work about a month ago and saw fresh figs in the fridge, I wanted to find some and make something nice and sweet.  Of course my grocery store wasn’t carrying them at the time and the only place I could go to get them was Costco, but you need a membership to shop there.  That went out the window really quick.  On Tuesday I was wandering around the grocery store and was in the produce section and noticed a small container of fresh figs.

THIS IS MY CHANCE!!! (more…)

I have been looking at this recipe for awhile and kept wondering what Green Thai Curry tasted like.  I guess it was the list of ingredients that had been putting be off, but finally I buckled down and decided that it was time.  The hardest part of the recipe was making the green chile paste, which I will admit I could have done a lot better with.  First off, when Isa says to use a coffee grinder to grind your spices DO IT.  Don’t think this would be the best time to use your mortar and pestle that has been sitting untouched for almost a year.  Because if you are me there is no way that you will be able to grind the spices into a powder.  But the coffee grinder you don’t use very often would have done the job.
